Instructions

Preheat oven to 375F. Cook rice halfway (about 10 minutes), drain.

Brown ground beef with onion and garlic, drain fat.

Mix beef, partially cooked rice, and half the diced tomatoes. Season.

Cut tops off peppers and remove seeds.

Fill peppers with beef mixture and place in a baking dish.

Pour remaining tomatoes over and around peppers.

Cover with foil and bake 35 minutes.

Top with cheddar and bake uncovered 10 more minutes.
