Instructions

Dice potatoes into small cubes. Cook in oiled skillet over medium heat for 12-15 minutes until golden and tender.

Add diced onion and bell pepper to the skillet. Cook 5 more minutes.

Season with cumin, salt, and pepper.

In a separate pan, scramble eggs until just cooked. Remove from heat.
