Add diced onion and bell pepper to the skillet. Cook 5 more minutes.

In a separate pan, scramble eggs until just cooked. Remove from heat.

Lay out tortillas. Divide potatoes, eggs, and shredded cheese among them.

Roll into burritos, tucking in sides. Wrap each tightly in foil.
