Instructions

Heat olive oil in a large pot. Saute onion and garlic until soft.

Add cumin and stir 30 seconds.

Add lentils, diced potatoes, carrots, and diced tomatoes.

Pour in 6 cups water and bring to a boil.

Reduce heat and simmer 30 minutes until lentils and vegetables are soft.

Season generously. Serve with crusty bread.
