Rice Stuffed Bell Peppers

Instructions

Preheat oven to 375°F. Cut tops off peppers and remove seeds.

Brown ground beef in a skillet. Add diced onion and garlic. Cook 5 minutes.

Stir in diced tomatoes, cooked rice, Italian seasoning, and salt.

Simmer 5 minutes until filling is thick.

Stuff each pepper tightly with the meat and rice mixture.

Place in a baking dish. Pour water into the bottom of the dish.

Top each pepper with shredded mozzarella. Cover with foil and bake 30 minutes.

Remove foil and bake 10 more minutes until cheese is golden.
