Instructions

Slice sausage into 1/4-inch rounds.

Heat oil in a large deep skillet over medium-high heat. Brown sausage slices 3-4 minutes per side. Set aside.

In the same pan, cook diced onion and bell pepper for 5 minutes.

Add minced garlic and Cajun seasoning. Cook 1 minute.

Add uncooked rice and stir to coat with oil.

Pour in chicken broth and diced tomatoes. Nestle sausage slices back in.

Bring to a boil, cover, reduce heat to low, and cook 18 minutes until rice is done.

Fluff with a fork and garnish with green onions.
