Instructions

Rinse lentils. Dice potatoes and carrots.

Heat oil in a large pot. Cook diced onion 6 minutes until golden.

Add minced garlic, curry powder, turmeric, and garam masala. Cook 1 minute.

Add diced tomatoes and cook 3 minutes.

Add lentils, potatoes, carrots, and vegetable broth. Bring to a boil.

Reduce heat and simmer 25 minutes until lentils and vegetables are tender.
